Yes. Admittedly, some species may not be able to. The Madagascar Hissing Cockroach (the ones most people think of, because they are big and good for movies, such as Men in Black) are wingless, but most cockroaches have wings.

Can cockroaches fly?
Many species of cockroaches have wings, but not all are good flyers. In fact, most cockroaches do not fly at all.

There are several species capable of flying short distances and a number of other species – including American cockroaches – that use their wings to glide from high elevations to lower surfaces.

Male Pennsylvania woods cockroaches and smoky brown cockroaches are both strong flyers. Australian, Asian and Cuban cockroaches are also capable of flight, but none of these could truly be labeled flying cockroaches.

From A level biology I remember that cockroach mouth-parts means they cannot drink, so their water has to come from food and what is generated in respiration.

They have incredible capacity for extracting moisture from their gut, and I believe their gut makes a sausage-skin like 'casing' for their faeces to protect their lower gut from abrasion by the dry rough pellets they pass.

Fascinating as subjects, and indeed crunchy.
