Charcoal sticks in water

There seems to be a new fashion of sticking Charcoal Sticks in Water!
What is the science behind this if any?

Carbon is used in gas masks, but the carbon is in granular form and thus a high surface area for contact with the air passing through.
Carbon in a full flow water filter I presume is using a similar method.

But a charcoal stick in a jug?

Charcoal is the new black. Look around Superdrug, facial cleansers, toothpaste etc.

I have been pushing bits of charcoal together in water but none of it sticks.
