There's your answer - disgust is at root a survival mechanism. The disgust from eating, putting things in the mouth i.e. oral disgust is considered by the paper I linked to to be the root of disgust. Presumably sexual disgust is also health-related, not least because of an extreme proximity to something covered in bacteria etc that could be ingested after the act. Similarly intimate interaction with corpses - it's the disease vector that drives the emotional response.
Sushi is raw meat or fish and so is steak tartare.

There are two levels of morality:
The morals/rules that make social living in a group possible that are widely found in humans and other animals. (Thou shalt not kill/steal/commit adultery).
The group-specific morals/rules that are mostly quite random and cultural. (Keep the Sabbath day holy, do not take the name of the Lord thy god in vain + chunks of Leviticus).

I wouldn't want to put myself anywhere near a chicken carcass; my guess is that the bones in the cavity wouldn't be at all comfortable.

As I think I may have mentioned elsewhere, the partner of a former work colleague reckoned she knew when 'the snip' had been reversed because (as she announced to her workmates) "it tasted salty".
